HAPPY MONDAY!!

Is it weird that I actually LIKE Mondays? I know a lot of people don't care for Monday, and tend to say things like, "well, it's Monday" when things don't go quite right.  Not me. I feel that ANY of the day can be good, or bad, or in-the-middle. It's all what YOU make of it.

Starting today I'm posting TWO meme entries to the blogosphere, as well as this snappy little recipe of mine that I ADORE to make for special occasions, so check out Music Monday and It's Monday, What Are You Reading?

Caramel Mousse in Chocolate Cups
Chocolate cups:
  • 2 bags semi-sweet chocolate chips
  • 1 tablespoon butter
Caramel Mousse:
  • 1 (16 ounce) tub of Cool Whip, thawed
  • 1/2 cup of your favorite caramel ice cream topping
Suggested toppings:
  • Plain whipped cream
  • Chopped peanut butter cups
  • Finely chopped dry roasted peanuts
Coat a 6-cup silicone muffin tin with non-stick spray or lightly coat with oil of your choice. Melt the chocolate chips in a large microwave-safe bowl for 1 minute, stir, then continue microwaving at 10 second intervals, stirring well after each until chips are completely melted and smooth. Divide evenly among the 6 cavities, shake the muffin tin around to make sure the chocolate covers up the sides and let set for 1 minute, then tip mold over and allow excess chocolate to drip back into the bowl. Save the extra chocolate for another use. Place the molded chocolate cups in the fridge while you prepare the caramel mousse. 

Empty the Cool Whip into a large mixing bowl. Add the ice cream topping and mix with an electric mixer until thoroughly combined. Place in the fridge to chill for at least two hours. 

Remove the chocolate cups from the fridge, unmold and place on serving plate or individual plates. Now you can get as simple or fancy as you like. You can spoon the mousse into the chocolate cups or pipe it with a large star tip. You can remelt the chocolate and drizzle more over the top. Add a little whipped cream and sprinkle on chopped peanut butter cups, mini caramel cups, chopped caramel bits, chopped dry roasted peanuts...be creative and have fun!!
